cold peanut butter soba noodles

i had a recipe for soba noodles that involved icky things like honey and fish sauce, 
so i veganized it, and came up with this gem.  
even my son likes it!
(you can adjust the spiciness to your liking)
p.s. my camera is STILL kaput, so i have to take pics on my phone. ew.



cold peanut butter soba noodles




ingredients


the sauce


  • 4 heaping tablespoons of creamy, natural peanut butter
  • approx a tablespoon of braggs liquid aminos or soy sauce
  • approx 1/8 cup of agave nectar (you can use honey if you really wanna)
  • approx 1/8 cup of water
  • two cloves of garlic, minced
  • a nice big dash of rice vinegar
  • sesame oil to taste (i used about 2 tablespoons)
  • crushed red pepper flakes to your desired hotness and taste



noodles & veggies

  • one package of cooked, rinsed, and chilled organic soba noodles (the package i used contained about 10 1/2 ounces)
  • one large carrot, spiral sliced (or julienned if you don't have a spiral slicer!)
  • one long, sweet red pepper or half of a red bell, sliced into thin strips
  • sesame seeds, optional
  • a handful of scallions, sliced
  • as many peanuts as you want, chopped


directions

  • toss the noodles with the peppers and carrots
  • toss the noodle mixture into the sauce mixture
  • toss with sesame seeds
  • top with scallions and peanuts
  • EAT.

  1. If you have never made this...DO SO! When Tug was here at the Hobbit Hut she made this a lot, it is easy and addictive....I really wish I had another bowl....hint hint...maybe w Smokey and the Bandit?
